Ingredients

For the Meat:

  • 1 kg (2.2 lbs) of beef or lamb, cut into large chunks
  • 1 large onion, quartered
  • 2 bay leaves
  • 4 cloves of garlic
  • 1 teaspoon of ground black pepper
  • Salt to taste
  • Water (enough to cover the meat)

For the Rice:

  • 2 cups of white rice
  • 4 cups of water or meat broth
  • 2 tablespoons of ghee or butter
  • Salt to taste

For the Crispy Bread Layer:

  • 4 pieces of pita bread, cut into small squares
  • 2 tablespoons of ghee or butter

For the Tomato-Garlic Sauce:

  • 2 tablespoons of vegetable oil
  • 8 cloves of garlic, minced
  • 2 cups of tomato sauce
  • 1/4 cup of vinegar
  • 1 teaspoon of ground cumin
  • Salt and pepper to taste

For Garnish:

  • Fresh parsley, chopped

Instructions

Preparing the Meat

  1. Cook the Meat: In a large pot, add the meat chunks, quartered onion, bay leaves, garlic cloves, ground black pepper, and salt. Cover with water and bring to a boil. Reduce the heat and simmer until the meat is tender, about 1.5 to 2 hours. Skim off any foam that appears on the surface. Once cooked, remove the meat and set aside. Reserve the broth for cooking the rice.

Preparing the Rice

  1. Cook the Rice: Rinse the rice under cold water until the water runs clear. In a large pot, melt the ghee or butter over medium heat. Add the rice and stir to coat the grains. Add 4 cups of water or the reserved meat broth, along with a pinch of salt. Bring to a boil, then reduce the heat, cover, and simmer until the rice is cooked and the liquid is absorbed, about 15-20 minutes. Fluff the rice with a fork and set aside.

Preparing the Crispy Bread Layer

  1. Fry the Bread: In a large skillet, melt the ghee or butter over medium heat. Add the pita bread squares and fry until golden and crispy. Remove from the skillet and drain on paper towels.

Preparing the Tomato-Garlic Sauce

  1. Make the Sauce: In the same skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant. Add the tomato sauce, vinegar, ground cumin, salt, and pepper. Simmer for about 10 minutes, stirring occasionally, until the sauce thickens slightly.

Assembling the Fattah

  1. Layer the Ingredients: In a large serving dish, start with a layer of crispy pita bread squares. Pour a small amount of the tomato-garlic sauce over the bread. Next, add a layer of cooked rice, followed by a layer of meat chunks. Pour the remaining tomato-garlic sauce over the meat.
  2. Garnish and Serve: Garnish the Fattah with chopped fresh parsley. Serve hot, with extra tomato-garlic sauce on the side if desired.
