Egyptian Recipe: Umm Ali (Egyptian Bread Pudding)

Umm Ali, also known as Om Ali or Omali, is a traditional Egyptian dessert that is rich, creamy, and utterly delicious. It’s a type of bread pudding made with puff pastry, milk, cream, and a variety of nuts and dried fruits. This comforting dessert is often enjoyed during special occasions and gatherings.

Ingredients

For the Pudding:

  • 1 package of puff pastry (about 500 grams)
  • 4 cups of whole milk
  • 1 cup of heavy cream
  • 1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1/2 cup of shredded coconut
  • 1/2 cup of raisins
  • 1/2 cup of chopped walnuts
  • 1/2 cup of chopped almonds
  • 1/2 cup of chopped pistachios
  • 1/2 cup of chopped dates (optional)
  • 2 tablespoons of butter, melted

For Garnish:

  • Ground cinnamon
  • Additional chopped nuts

Instructions

Preparing the Puff Pastry

  1. Bake the Puff Pastry: Preheat your oven to 375°F (190°C). Lay the puff pastry sheets on a baking sheet and bake according to the package instructions until golden brown and crispy. Once baked, break the pastry into bite-sized pieces and set aside.

Preparing the Milk Mixture

  1. Heat the Milk and Cream: In a large saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is hot but not boiling. Stir in the vanilla extract.

Assembling the Umm Ali

  1. Layer the Ingredients: In a large baking dish, spread half of the baked puff pastry pieces. Sprinkle with half of the shredded coconut, raisins, walnuts, almonds, pistachios, and dates (if using). Add the remaining puff pastry pieces on top, followed by the rest of the nuts and dried fruits.
  2. Pour the Milk Mixture: Pour the hot milk and cream mixture evenly over the layered puff pastry and nuts. Make sure all the pieces are soaked in the milk mixture.
  3. Add Butter: Drizzle the melted butter over the top of the pudding.

Baking the Pudding

  1. Bake the Pudding: Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and the pudding is bubbling.

Serving the Umm Ali

  1. Garnish: Sprinkle the top of the pudding with ground cinnamon and additional chopped nuts.
  2. Serve and Enjoy: Serve the Umm Ali warm, scooping it into individual bowls. It can be enjoyed as is or with a dollop of whipped cream or a scoop of vanilla ice cream.
