Ingredients

  • 1 cup pearl barley

  • 2 cups milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

Preparing the Barley

  1. Cook the Barley:
    • Rinse the pearl barley under cold water.
    • In a large pot, bring 2 cups of water to a boil. Add a pinch of salt.
    • Add the pearl barley to the boiling water. Reduce the heat, cover, and let it simmer for about 25-30 minutes, or until the barley is tender and has absorbed most of the water.

    • Gradually add the warm milk and butter mixture to the mashed potatoes and barley, stirring continuously until you reach the desired creamy consistency.
  3. Cook the Bacon and Onions:
    • In a skillet, cook the diced bacon or ham over medium heat until it starts to brown and crisp.
    • Add the finely chopped onion to the skillet and sauté until the onion is soft and translucent, and the bacon is fully cooked.
  4. Combine Everything:
    • Stir the cooked bacon and onions into the mashed potato and barley mixture.
    • Season with salt and pepper to taste.

    • Transfer the Mulgipuder to a serving dish.
