Coquilles Saint-Jacques is a classic French dish that features tender scallops in a creamy, wine-infused sauce, topped with a golden breadcrumb crust. This elegant and flavorful dish is perfect for special occasions or when you want to impress your guests with a taste of French sophistication.

Ingredients:

  • 1 lb (450g) sea scallops
  • 2 tablespoons butter
  • 1 shallot, finely chopped
  • 1/2 cup dry white wine
  • 1/2 cup heavy cream
  • 1/2 cup Gruyère cheese, grated
  • 1/4 cup breadcrumbs
  • 2 tablespoons parsley, chopped
  • Salt and freshly ground black pepper to taste
  • Lemon wedges for garnish

Instructions:

Preparing the Scallops:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Scallops:
    • In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the scallops and cook for 2-3 minutes on each side until they are golden brown and just cooked through. Remove the scallops from the skillet and set aside.
  3. Sauté the Shallot:
    • In the same skillet, add the remaining tablespoon of butter and the chopped shallot. Sauté until the shallot is translucent, about 2 minutes.
  4. Deglaze the Pan:
    • Pour in the white wine and bring to a simmer. Cook for 2-3 minutes until the wine is reduced by half.
  5. Make the Sauce:
    • Stir in the heavy cream and cook for another 2 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

Assembling the Dish:

  1. Prepare the Baking Dish:
    • Divide the cooked scallops among individual ramekins or a shallow baking dish. Pour the cream sauce over the scallops.
  2. Top with Cheese and Breadcrumbs:
    • Sprinkle the grated Gruyère cheese evenly over the scallops. Top with breadcrumbs and a sprinkle of chopped parsley.
  3. Bake:
    • Place the ramekins or baking dish in the preheated oven and bake for 10-12 minutes until the top is golden brown and bubbly.
  4. Garnish and Serve:
    • Serve the Coquilles Saint-Jacques hot, garnished with lemon wedges and additional parsley if desired.
