Stovies is a classic Scottish comfort food that is traditionally made from leftover roast meat, potatoes, and onions. This hearty and warming dish is perfect for using up leftovers and is deeply rooted in Scottish culinary tradition. Here’s how you can make Stovies at home.

Ingredients:

  • 500g (1.1 lbs) potatoes, peeled and diced
  • 1 large onion, finely chopped
  • 2 tablespoons butter or dripping
  • 400g (14 oz) leftover roast meat (beef, lamb, or sausage), diced
  • 500ml (2 cups) beef stock
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare the Base:
    • In a large pot, melt the butter or dripping over medium heat. Add the finely chopped onion and cook until softened, about 5 minutes.
  2. Add Potatoes and Meat:
    • Add the diced potatoes to the pot and stir to coat them in the butter and onions. Cook for a few minutes.
    • Add the leftover roast meat and mix well.
  3. Cook the Stovies:
    • Pour in the beef stock, ensuring the ingredients are just covered. Bring to a boil, then reduce the heat and let it simmer gently.
    • Cover the pot and cook for about 30-40 minutes, stirring occasionally, until the potatoes are tender and have absorbed most of the liquid. The mixture should be thick and stew-like.
  4. Season and Serve:
    • Season with salt and pepper to taste.
    • Serve hot, garnished with chopped fresh parsley if desired.

Stovies are a versatile dish that can be easily adjusted based on what you have on hand, making them a perfect example of traditional Scottish home cooking. They are best enjoyed with oatcakes or crusty bread on the side.
