Tarator is a classic Bulgarian cold soup, perfect for hot summer days. It’s made with yogurt, cucumbers, garlic, and dill, offering a refreshing and tangy flavor that is both light and satisfying.

Ingredients

For the Tarator, you will need:

  • 2 cups of plain yogurt
  • 1 large cucumber
  • 2 cloves of garlic
  • 1/4 cup of fresh dill
  • 1/4 cup of walnuts, finely chopped (optional)
  • 1 tablespoon of olive oil
  • 1 cup of cold water (adjust for desired consistency)
  • Salt to taste
  • Fresh ground black pepper to taste
  • Ice cubes (optional for extra chill)

Instructions

Step 1: Preparing the Ingredients

  1. Chop the Cucumber: Peel the cucumber if desired, then grate or finely chop it. If grating, you may want to squeeze out excess water to avoid diluting the soup too much.
  2. Mince the Garlic: Peel and mince the garlic cloves.
  3. Chop the Dill: Finely chop the fresh dill.

Step 2: Mixing the Soup

  1. Combine Yogurt and Water: In a large bowl, whisk together the yogurt and cold water until smooth. Adjust the amount of water based on how thick or thin you prefer the soup.
  2. Add Cucumber and Garlic: Stir in the grated or chopped cucumber and minced garlic.
  3. Season: Add the chopped dill, olive oil, and finely chopped walnuts (if using). Season with salt and freshly ground black pepper to taste. Mix well to combine all the ingredients.

Step 3: Chilling

  1. Chill the Soup: Cover the bowl and refrigerate the soup for at least 1 hour to let the flavors meld together. For an extra chill, you can add ice cubes just before serving.

Serving

Tarator is best served cold, garnished with a sprinkle of fresh dill and a drizzle of olive oil. It can be enjoyed as a starter, a side dish, or a light main course on hot days.

Tips and Variations

  • Nut-Free: If you prefer, you can omit the walnuts for a nut-free version.
  • Extra Herbs: For a different flavor profile, try adding fresh mint or parsley in addition to the dill.
  • Creamier Version: For a creamier texture, you can blend the ingredients before chilling, though the traditional version keeps the ingredients finely chopped or grated.
