Chatamari is a traditional Nepali dish often referred to as “Nepali pizza.” It is a savory rice crepe topped with a variety of ingredients, making it a delicious and versatile snack or meal. Here’s how to make it:

Ingredients:

  • 2 cups rice flour
  • 1 1/2 cups water
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin seeds
  • 200g ground meat (chicken, pork, or beef)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 tomato, finely chopped
  • 1 bell pepper, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Fresh cilantro, chopped for garnish

Instructions:

  1. Prepare the Batter:
    • In a large mixing bowl, combine the rice flour, water, and salt. Mix until smooth to form a batter.
    • Let the batter rest for about 15 minutes.
  2. Prepare the Toppings:
    • In a frying pan, heat the vegetable oil over medium heat.
    • Add the cumin seeds and let them splutter.
    • Add the finely chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
    • Add the ground meat and cook until browned.
    • Stir in the chopped tomato, bell pepper, green chilies, ground turmeric, ground cumin, ground coriander, salt, and pepper. Cook until the vegetables are tender and the meat is cooked through.
    • Remove from heat and set aside.
  3. Cook the Chatamari:
    • Heat a non-stick skillet or griddle over medium heat.
    • Pour a ladleful of batter onto the skillet and spread it out in a circular motion to form a thin crepe.
    • Cook for about 2-3 minutes, until the bottom is set and slightly golden.
    • Spread a portion of the meat mixture evenly over the top of the crepe.
    • Cover the skillet with a lid and cook for another 3-4 minutes, until the crepe is cooked through and the toppings are heated.
  4. Serve:
    • Transfer the cooked chatamari to a serving plate.
    • Garnish with fresh cilantro.
    • Repeat with the remaining batter and meat mixture.
