Ingredients

  • 1 lb beef chuck, cut into large chunks
  • 1 lb pork shoulder, cut into large chunks
  • 1/2 lb Portuguese chorizo, sliced
  • 1/2 lb blood sausage (morcela), sliced
  • 1/2 lb smoked bacon, cut into pieces
  • 1/2 lb chicken thighs
  • 4 large potatoes, peeled and halved
  • 4 carrots, peeled and halved
  • 1 large cabbage, cut into wedges
  • 2 turnips, peeled and halved
  • 2 onions, peeled and halved
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 cups water or beef broth
  • Fresh parsley, chopped, for garnish

Instructions

Preparing the Ingredients

  1. Prep the Vegetables:
    • Peel and halve the potatoes, carrots, and turnips.
    • Cut the cabbage into wedges.
    • Peel and halve the onions.
    • Mince the garlic.
  2. Prepare the Meats:
    • Cut the beef chuck and pork shoulder into large chunks.
    • Slice the chorizo and blood sausage.
    • Cut the smoked bacon into pieces.
    • Keep the chicken thighs whole.

Cooking the Cozido

  1. Sauté the Aromatics:
    • In a large pot or Dutch oven, add the minced garlic and bay leaves.
    • Add the beef chuck and pork shoulder chunks, and cook until browned on all sides.
  2. Add the Broth:
    • Pour in the water or beef broth.
