Falafel, known as Ta’ameya in Egypt, is a popular street food made from ground fava beans, fresh herbs, and spices. These crispy, golden-brown patties are typically served in pita bread with a variety of toppings and sauces. Egyptian Falafel is distinctively different from other variations as it uses fava beans instead of chickpeas, giving it a unique flavor and texture.

Ingredients

For the Falafel:

  • 1 1/2 cups dried fava beans, soaked overnight
  • 1 large onion, chopped
  • 4 cloves of garlic, minced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh dill, chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Vegetable oil for frying

For Serving:

  • Pita bread
  • Tahini sauce
  • Chopped tomatoes
  • Chopped cucumbers
  • Pickles
  • Fresh parsley
  • Lemon wedges

Instructions

Preparing the Falafel

  1. Soak the Fava Beans: Rinse the dried fava beans and soak them in plenty of water overnight. Drain and rinse again before using.
  2. Process the Ingredients: In a food processor, combine the soaked fava beans, chopped onion, minced garlic, parsley, cilantro, dill, ground coriander, ground cumin, baking powder, salt, and pepper. Process until the mixture is well combined and forms a thick, slightly coarse paste. If the mixture is too dry, add a tablespoon of water at a time until it holds together.
  3. Shape the Falafel: Using wet hands, form the mixture into small patties or balls, about the size of a golf ball. Flatten slightly if forming patties.

Frying the Falafel

  1. Heat the Oil: In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
  2. Fry the Falafel: Carefully lower the falafel patties or balls into the hot oil in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy on all sides, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.

Serving the Falafel

  1. Prepare the Pita Bread: Warm the pita bread slightly in the oven or on a stovetop.
  2. Assemble the Sandwiches: Stuff the pita bread with the fried falafel, chopped tomatoes, cucumbers, pickles, and fresh parsley. Drizzle with tahini sauce and squeeze a lemon wedge over the top.
  3. Serve and Enjoy: Serve the falafel sandwiches immediately, accompanied by extra tahini sauce and lemon wedges on the side.
