  • 500 grams (about 1 lb) ground beef or lamb
  • 1 large onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil

For Assembly:

  • Store-bought or homemade flatbreads (if not making dough from scratch)
  • Olive oil for brushing

Instructions

Preparing the Dough (Optional)

  1. Mix the Dough: In a large mixing bowl, combine the flour, salt, sugar, and instant yeast. Add the warm water and olive oil, and mix until a dough forms.
  2. Knead the Dough: Turn the dough out onto a lightly floured surface and knead for about 10 minutes, until the dough is smooth and elastic.
  3. Let it Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preparing the Meat Filling

  1. Cook the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and garlic, and sauté until softened.
  2. Add the Meat: Add the ground beef or lamb to the skillet and cook until browned. Drain any excess fat.
  3. Season the Meat: Stir in the ground cumin, ground coriander, ground paprika, ground cinnamon, salt, and pepper. Add the tomato paste and chopped parsley, and mix well. Cook for another 5 minutes, then remove from heat and let it cool slightly.

Assembling the Hawawshi

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Roll Out the Dough: If using homemade dough, divide it into equal portions and roll each portion out into a thin circle or oval on a floured surface. If using store-bought flatbreads, skip this step.
  3. Fill the Bread: Place a portion of the meat mixture onto one half of each rolled-out dough or flatbread, spreading it evenly but leaving a small border around the edges. Fold the dough or flatbread over to enclose the filling, and press the edges together to seal.
  4. Brush with Olive Oil: Brush the top of each stuffed flatbread with olive oil.
  5. Bake the Hawawshi: Place the filled flatbreads on a baking sheet and bake in the preheated oven for about 20-25 minutes, or until the bread is golden brown and crispy.

Serving the Hawawshi

  1. Slice and Serve: Let the hawawshi cool slightly, then slice them into wedges or halves.
  2. Garnish and Enjoy: Serve hot, garnished with fresh parsley and accompanied by a side of tahini sauce, pickles, or a fresh salad.
