Hawaiian Classic: Kalua Pork

Kalua Pork is a traditional Hawaiian dish that is typically prepared in an underground oven called an imu. This slow-cooked pork is tender, smoky, and full of flavor. While the traditional method requires an imu, you can recreate this delicious dish at home using a slow cooker or oven. Follow this recipe to make authentic Kalua Pork.

Ingredients:

  • 4-5 lbs (1.8-2.3 kg) pork shoulder (pork butt)
  • 1 tablespoon liquid smoke
  • 2 tablespoons Hawaiian sea salt or kosher salt
  • 2-3 large banana leaves or aluminum foil

Instructions:

Preparing the Pork:

  1. Season the Pork:
    • Rub the pork shoulder all over with the liquid smoke and salt.
  2. Wrap the Pork:
    • Wrap the seasoned pork shoulder in banana leaves, securing with kitchen twine, or wrap tightly in aluminum foil.

Cooking the Pork (Slow Cooker Method):

  1. Prepare the Slow Cooker:
    • Place the wrapped pork shoulder in the slow cooker. Add a little water to the bottom of the slow cooker if desired.
  2. Cook on Low:
    • Cook on low for 8-10 hours, or until the pork is tender and easily shreds with a fork.

Cooking the Pork (Oven Method):

  1. Preheat the Oven:
    • Preheat your oven to 300°F (150°C).
  2. Prepare the Baking Dish:
    • Place the wrapped pork shoulder in a roasting pan or baking dish. Add a little water to the bottom of the pan if desired.
  3. Cook in the Oven:
    • Cover the pan tightly with aluminum foil and bake for 6-8 hours, or until the pork is tender and easily shreds with a fork.

Shredding the Pork:

  1. Shred the Pork:
    • Remove the pork from the slow cooker or oven and let it rest for a few minutes. Unwrap the pork and shred it with two forks, discarding any excess fat.
  2. Moisten with Juices:
    • If desired, moisten the shredded pork with some of the cooking juices.

Serving:

  1. Serve Hot:
    • Serve the Kalua Pork hot, accompanied by traditional Hawaiian sides such as steamed rice, macaroni salad, or coleslaw.
