Zaalouk is a traditional Moroccan cooked salad made from eggplants and tomatoes, flavored with garlic, olive oil, and a blend of aromatic spices. It is often enjoyed as a side dish or a dip with warm bread. Here’s a traditional recipe to help you make Moroccan Zaalouk at home.

Ingredients:

  • 2 large eggplants
  • 4 large tomatoes, peeled and chopped
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cayenne pepper (optional)
  • Salt to taste
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions:

  1. Prepare the Eggplants:
    • Preheat your oven to 200°C (400°F).
    • Prick the eggplants with a fork in several places and place them on a baking sheet.
    • Roast the eggplants in the preheated oven for about 30-40 minutes, or until they are soft and the skin is charred.
    • Remove the eggplants from the oven and let them cool. Once cool enough to handle, peel off the charred skin and roughly chop the flesh.
  2. Cook the Zaalouk:
    • In a large skillet or pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
    • Add the chopped tomatoes to the skillet and cook until they start to break down and form a sauce.
    • Stir in the ground cumin, ground paprika, ground coriander, ground black pepper, ground turmeric, ground cayenne pepper (if using), and salt. Cook for a few minutes until the spices are well combined.
    • Add the roasted eggplant flesh to the skillet and mix well. Cook the mixture over medium heat, stirring occasionally, until the eggplant and tomatoes are well incorporated and the mixture is thickened (about 15-20 minutes).
  3. Add Fresh Herbs:
    • Stir in the chopped fresh cilantro and parsley, and cook for another 5 minutes.
    • Add the lemon juice and mix well.
  4. Serve:
    • Serve the Zaalouk warm or at room temperature, drizzled with a little extra olive oil if desired.
    • Enjoy it with warm bread or as a side dish to your favorite Moroccan meals.

  • Roasting Eggplants: Ensure the eggplants are roasted until very soft for the best texture and flavor.
