Ingredients:

For the Poke:

  • 1 lb (450g) sashimi-grade tuna or salmon, diced
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon grated ginger
  • 1 clove garlic, minced
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • 1/4 teaspoon red pepper flakes (optional)

For the Bowl:

  • 2 cups cooked sushi rice or jasmine rice
  • 1 avocado, sliced
  • 1/2 cup edamame, shelled and cooked
  • 1/2 cup cucumber, thinly sliced
  • 1/2 cup shredded carrots
  • 1/4 cup pickled radishes or ginger
  • Seaweed salad (optional)
  • Fresh cilantro or green onions, chopped (for garnish)

For the Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sriracha or hot sauce (optional)

Instructions:

Preparing the Poke:

  1. Marinate the Fish:
    • In a bowl, combine the soy sauce, sesame oil, rice vinegar, honey or brown sugar, grated ginger, and minced garlic. Add the diced tuna or salmon and toss to coat. Stir in the chopped green onions, sesame seeds, and red pepper flakes (if using). Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Preparing the Bowl:

  1. Cook the Rice:
    • Prepare the sushi rice or jasmine rice according to the package instructions. Let it cool slightly before assembling the bowl.

Making the Sauce:

  1. Mix the Sauce:
    • In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or brown sugar, and sriracha or hot sauce (if using). Set aside.

Assembling the Poke Bowl:

  1. Arrange the Rice:
    • Divide the cooked rice among serving bowls.
  2. Add the Poke:
    • Spoon the marinated fish over the rice.
  3. Add Fresh Toppings:
    • Arrange the avocado slices, edamame, cucumber, shredded carrots, and pickled radishes or ginger around the bowl. Add a spoonful of seaweed salad if desired.
  4. Drizzle with Sauce:
    • Drizzle the prepared sauce over the bowl.
  5. Garnish:
    • Garnish with fresh cilantro or chopped green onions.
