Samosas are a popular Indian snack known for their crispy pastry filled with a spiced mixture of potatoes and peas. They are often enjoyed with chutneys and make for a delicious appetizer or tea-time treat. Here’s a detailed guide to making authentic Samosas at home.

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil or ghee
  • 1/2 teaspoon carom seeds (ajwain)
  • Salt to taste
  • Water, as needed

For the Filling:

  • 4 large potatoes, boiled and mashed
  • 1 cup green peas, boiled
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 tablespoon ginger, minced
  • 3 green chilies, chopped (optional)
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon amchur (dried mango powder) or lemon juice
  • Salt to taste
  • Fresh coriander leaves, chopped

For Frying:

  • Vegetable oil

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, combine the all-purpose flour, carom seeds, and salt.
  2. Add the vegetable oil or ghee and mix well until the mixture resembles breadcrumbs.
  3. Gradually add water and knead to form a firm and smooth dough.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.

Step 2: Prepare the Filling

  1. Heat 2 tablespoons of oil in a pan over medium heat.
  2. Add the cumin seeds and mustard seeds. Let them sizzle for a few seconds.
  3. Add the minced ginger and chopped green chilies (if using), and sauté for 2-3 minutes until fragrant.
  4. Stir in the turmeric powder, ground coriander, ground cumin, and garam masala. Cook the spices for 1-2 minutes.
  5. Add the boiled and mashed potatoes and green peas. Mix well to combine.
  6. Add the amchur (or lemon juice), salt, and fresh coriander leaves. Cook for another 5 minutes, stirring occasionally.
  7. Remove from heat and let the filling cool.

Step 3: Assemble the Samosas

  1. Divide the dough into small equal-sized balls.
  2. Roll each ball into a thin oval or round sheet.
  3. Cut the sheet in half to form two semi-circles.
  4. Take one semi-circle and fold it into a cone shape, sealing the edge with a little water.
  5. Fill the cone with the potato and pea mixture.
  6. Seal the open edge by pressing it together and folding it over to ensure it is tightly sealed.

Step 4: Fry the Samosas

  1. Heat vegetable oil in a deep frying pan over medium heat.
  2. Gently slide the samosas into the hot oil and fry until they are golden brown and crispy on all sides.
  3. Remove the samosas from the oil and drain on paper towels.

Step 5: Serve

  1. Serve the hot samosas with mint chutney, tamarind chutney, or ketchup.
