Ingredients:

  • 1 cup grated raw potatoes
  • 1 cup mashed potatoes
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • Butter or oil for frying

Instructions:

  1. Prepare the Potatoes:
    • Peel and grate the raw potatoes, then squeeze out as much excess moisture as possible using a clean kitchen towel.
    • Combine the grated potatoes with the mashed potatoes in a large mixing bowl.
  2. Make the Batter:
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Add the dry ingredients to the potato mixture, then stir in the buttermilk and egg until well combined. The batter should be thick but pourable.
  3. Cook the Boxty:
    • Heat a generous amount of butter or oil in a large frying pan over medium heat.
    • Drop spoonfuls of the batter into the pan, spreading them out slightly to form small pancakes.
    • Cook for about 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
  4. Serve:
    • Serve the boxty hot, topped with butter, sour cream, or your favorite toppings. They can also be served with a full Irish breakfast, alongside bacon, sausages, and eggs.
