Ćevapi – Traditional Serbian Grilled Sausages

Ćevapi, also known as ćevapčići, are small, delicious grilled sausages made from a mixture of ground meats and spices. They are a staple of Serbian cuisine and are typically served with flatbread, onions, and a generous dollop of ajvar. Here’s how you can make this classic Serbian dish at home.

Ingredients:

  • 500g ground beef
  • 500g ground lamb or pork
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon baking soda
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional, for heat)
  • 1 tablespoon olive oil

Instructions:

  1. Prepare the Meat Mixture:
    • In a large bowl, combine the ground beef and ground lamb or pork. Add the finely chopped onion, minced garlic, baking soda, paprika, salt, black pepper, and cayenne pepper if using. Mix well until all ingredients are thoroughly combined.
    • Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight if possible, to allow the flavors to meld together.
  2. Shape the Ćevapi:
    • Remove the meat mixture from the refrigerator. With wet hands, shape the mixture into small sausages about 3 inches long and 1 inch thick. Place them on a plate or baking sheet.
  3. Grill the Ćevapi:
    • Preheat your grill to medium-high heat. Brush the ćevapi with olive oil to prevent sticking.
    • Grill the ćevapi for about 10-12 minutes, turning occasionally, until they are evenly browned and cooked through.
  4. Serve:
    • Serve the grilled ćevapi with warm flatbread (such as lepinja or pita), finely chopped onions, and a generous serving of ajvar. You can also add some fresh tomatoes and cucumber slices for a refreshing touch.
