Ingredients:

  • 2 tablespoons butter
  • 1 onion, finely chopped

  • 6 cups chicken or vegetable broth
  • 1 bay leaf

Instructions:

Preparing the Soup:

  1. Cook the Onion and Garlic:
    • In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
  2. Add the Smoked Meat:
    • Add the diced smoked sausage or ham to the pot and cook until browned, about 5 minutes.
  3. Add the Sauerkraut and Potatoes:
    • Stir in the sauerkraut and diced potatoes.
  4. Add the Broth and Spices:
    • Pour in the chicken or vegetable broth. Add the bay leaf, caraway seeds, and dried marjoram. Bring to a boil, then reduce the heat and simmer for about 20-25 minutes, or until the potatoes are tender.
  5. Add the Cream:
    • Stir in the heavy cream and cook for another 5 minutes. Season with salt and pepper to taste.

  1. Serve Hot:
    • Ladle the hot soup into bowls. Garnish with fresh dill if desired.
