Ingredients:

    • 150 g (1 1/4 cups) all-purpose flour
    • 1 teaspoon baking powder
    • 4 tablespoons milk
  • For the Meringue:
    • 4 large egg whites
    • 200 g (1 cup) sugar
    • 50 g (1/2 cup) sliced almonds
  • For the Filling:
    • 400 ml (1 2/3 cups) heavy cream
    • 2 tablespoons sugar
    • 1 teaspoon vanilla extract
    • 1 packet (about 40 g) vanilla pudding mix (prepared according to package instructions)

Instructions:

  1. Prepare the Cake Layer:
    • Preheat your oven to 175°C (350°F). Grease and line a rectangular baking pan (about 9×13 inches) with parchment paper.
    • In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the egg yolks and vanilla extract, mixing well.
    • In a separate bowl, sift together the flour and baking powder. Gradually add the dry ingredients to the butter mixture, alternating with the milk, until a smooth batter forms.
    • Spread the batter evenly into the prepared baking pan.
  2. Prepare the Meringue:
    • In a clean mixing bowl, beat the egg whites until they form soft peaks. Gradually add the sugar, continuing to beat until stiff peaks form.
    • Spread the meringue mixture evenly over the cake batter. Sprinkle the sliced almonds over the meringue.
  3. Bake the Cake:
    • Bake in the preheated oven for 25-30 minutes, or until the meringue is golden and the cake is cooked through. A toothpick inserted into the cake layer should come out clean.
    • Allow the cake to cool completely in the pan.
  4. Prepare the Filling:
    • In a mixing bowl, whip the heavy cream with the sugar and vanilla extract until stiff peaks form.

    • Once the cake is completely cooled, carefully cut it in half to create two layers.
