Perunarieska, or Finnish Potato Flatbread, is a traditional Finnish bread made from mashed potatoes. This soft and delicious flatbread is perfect served with butter, smoked salmon, and fresh dill. Here’s how to make it:

Ingredients:

  • 500g potatoes, peeled and boiled
  • 100g all-purpose flour
  • 1 egg
  • 50g butter, melted
  • 1 teaspoon salt
  • Butter, for serving
  • Smoked salmon, for serving
  • Fresh dill, for garnish

Instructions:

  1. Prepare the Potatoes:
    • Peel and boil the potatoes in salted water until they are tender, about 15-20 minutes.
    • Drain the potatoes and mash them until smooth. Allow them to cool slightly.
  2. Make the Dough:
    • In a large mixing bowl, combine the mashed potatoes, flour, egg, melted butter, and salt.
    • Mix until a soft dough forms. If the dough is too sticky, add a little more flour.
  3. Shape the Flatbreads:
    • Preheat your oven to 225°C (437°F).
    • Divide the dough into small balls, about the size of a golf ball.
    • On a lightly floured surface, flatten each ball into a round disc, about 1 cm thick.
  4. Bake the Flatbreads:
    • Place the flattened dough discs onto a baking sheet lined with parchment paper.
    • Bake in the preheated oven for about 15-20 minutes, or until the flatbreads are golden brown and cooked through.
  5. Serve:
    • Serve the warm Perunarieska with butter, smoked salmon, and fresh dill.
    • Enjoy these delicious flatbreads as a snack or as part of a meal.
