Sancocho is a traditional Colombian soup known for its rich and hearty flavors. It includes a variety of meats and vegetables, making it a complete and satisfying meal. Here’s how to make it:

Ingredients:

  • 500g beef stew meat, cut into chunks
  • 500g chicken pieces (legs or thighs)
  • 500g pork ribs or shoulder, cut into chunks
  • 2 ears of corn, cut into pieces
  • 2 large plantains, peeled and sliced
  • 3 large potatoes, peeled and cut into chunks
  • 1 large yuca (cassava), peeled and cut into chunks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 bunch of cilantro, chopped
  • 3 liters of water
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Avocado slices, for serving
  • Cooked white rice, for serving
  • Lime wedges, for serving

Instructions:

  1. Prepare the Meats:
    • In a large pot, heat the vegetable oil over medium heat.
    • Add the beef, chicken, and pork. Brown the meats on all sides, then remove them from the pot and set aside.
  2. Cook the Vegetables:
    • In the same pot, add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are soft.
    • Add the chopped tomatoes and cook until they begin to break down.
  3. Add the Liquids and Meats:
    • Return the browned meats to the pot.
    • Add 3 liters of water and bring to a boil.
    • Reduce the heat to low and let it simmer for about 1 hour, or until the meats are tender.
  4. Add the Vegetables:
    • Add the yuca, plantains, potatoes, and corn to the pot.
    • Season with salt and pepper to taste.
    • Continue to simmer for another 30-40 minutes, or until the vegetables are tender.
  5. Finish and Serve:
    • Stir in the chopped cilantro and let the soup simmer for an additional 5 minutes.
    • Serve the Sancocho hot, with a side of avocado slices, cooked white rice, and lime wedges.
