Pollo al Ajillo is a traditional Spanish dish that features tender chicken pieces cooked with a generous amount of garlic and olive oil. This simple yet flavorful dish is perfect for any occasion and brings the authentic taste of Spain to your table. Follow this recipe to create a delicious Pollo al Ajillo at home.

Ingredients:

  • 1 whole chicken (about 3-4 lbs), cut into serving pieces
  • Salt and freshly ground black pepper
  • 1/4 cup olive oil
  • 10-12 cloves garlic, peeled and thinly sliced
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

Preparing the Chicken:

  1. Season the Chicken:
    • Season the chicken pieces with salt and freshly ground black pepper.
  2. Heat the Oil:
    • In a large skillet or frying pan, heat the olive oil over medium-high heat until shimmering.
  3. Cook the Chicken:
    • Add the chicken pieces to the skillet, skin-side down, and cook until golden brown and crispy, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.

Making the Sauce:

  1. Sauté the Garlic:
    • In the same skillet, add the sliced garlic and sauté until golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
  2. Deglaze the Pan:
    • Add the white wine to the skillet, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes until slightly reduced.
  3. Add the Broth and Lemon Juice:
    • Stir in the chicken broth and lemon juice. Bring the mixture to a simmer.
  4. Return the Chicken:
    • Return the chicken pieces to the skillet, skin-side up. Reduce the heat to medium-low and simmer, uncovered, for 20-25 minutes, or until the chicken is cooked through and tender.

Serving:

  1. Garnish:
    • Transfer the chicken to a serving platter and spoon the garlic sauce over the top. Garnish with chopped fresh parsley.
  2. Serve Hot:
    • Serve the Pollo al Ajillo hot, with crusty bread or roasted potatoes to soak up the flavorful sauce.
