This recipe offers a versatile and easy way to create a delightful fruit cobbler, perfect for any season.

Ingredients:

For the Fruit Filling:

  • 4-6 cups fresh fruit (peaches, berries, apples, plums, etc.)
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice (optional)
  • 1/2 teaspoon vanilla extract (optional)

For the Biscuit Topping:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup milk

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Prepare the Filling:
    • In a large bowl, combine the fruit, sugar, cornstarch, lemon juice (if using), and vanilla extract (if using). Toss gently to coat the fruit evenly.
  3. Make the Biscuit Topping:
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    • Cut in the cold butter with a pastry cutter or two knives until the mixture resembles coarse crumbs.
    • Stir in the milk until a soft dough forms. Don’t overmix.
  4. Assemble the Cobbler:
    • Pour the fruit filling into the prepared baking dish.
    • Drop tablespoons of dough evenly over the fruit, leaving some gaps for the fruit to bubble through.
  5. Bake:
    • Bake for 40-45 minutes, or until the topping is golden brown and the fruit is bubbly.
  6. Cool and Serve:
    • Let the cobbler cool slightly before serving with a scoop of ice cream, whipped cream, or a drizzle of your favorite sauce.

Tips:

  • You can use any combination of your favorite fruits.
  • For a thicker fruit filling, add 1-2 tablespoons more cornstarch.
  • If the topping browns too quickly, cover the dish loosely with foil for the remaining baking time.
  • For a richer flavor, use brown sugar in the topping instead of white sugar.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
