Ingredients

For the Malabi:

  • 2 cups whole milk
  • 1 cup heavy cream

Instructions

    • In a small bowl, whisk the cornstarch with 1/4 cup of cold water until smooth. Gradually whisk the cornstarch mixture into the hot milk mixture.
    • Continue to cook, stirring constantly, until the mixture thickens and comes to a gentle boil. Remove from heat and stir in the rose water.
    • Pour the Malabi mixture into individual serving glasses or bowls. Allow to cool to room temperature, then cover and refrigerate for at least 2 hours, or until set.
  2. Prepare the Syrup:
    • In a small saucepan, combine the sugar, water, lemon juice, and red food coloring (if using). Bring to a boil over medium heat, stirring until the sugar dissolves.
    • Reduce the heat and simmer for about 5 minutes, until the syrup thickens slightly. Remove from heat and stir in the rose water. Let cool to room temperature.
  3. Serve the Malabi:
    • Before serving, pour a spoonful of the rose water syrup over each Malabi.
    • Garnish with chopped pistachios, shredded coconut, and a sprinkle of ground cinnamon.
