Ingredients:

  • 2 pieces of pita bread
  • 2 large tomatoes, diced

  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 4-5 radishes, thinly sliced
  • 1 small red onion, thinly sliced
  • 4-5 green onions, chopped
  • 1 bunch of fresh parsley, chopped
  • 1 bunch of fresh mint, chopped
  • 1 head of romaine lettuce, chopped

For the Dressing:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon sumac
  • 1 tablespoon pomegranate molasses
  • 1-2 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Prepare the Pita Bread:
    • Preheat your oven to 180°C (350°F). Cut the pita bread into small squares or triangles.
    • Place the pita pieces on a baking sheet and bake for about 10-12 minutes, or until they are crispy and golden brown. Set aside to cool.
  2. Chop the Vegetables and Herbs:
    • Dice the tomatoes, cucumber, red bell pepper, and green bell pepper. Thinly slice the radishes and red onion. Chop the green onions, parsley, and mint. Chop the romaine lettuce.
  3. Prepare the Dressing:
    • In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, sumac, pomegranate molasses, minced garlic, salt, and pepper until well combined.
  4. Assemble the Salad:
    • In a large mixing bowl, combine the chopped vegetables and herbs. Add the crispy pita pieces.
    • Pour the dressing over the salad and toss everything together until the vegetables and pita are well coated with the dressing.
  5. Serve:
