Here’s a traditional recipe to help you make Lebanese Kibbeh Nayeh at home.

Ingredients:

  • For the Kibbeh Nayeh:
    • 500 g (1 lb) fresh lean lamb or beef, finely minced
    • 1 cup fine bulgur wheat
    • 1 small onion, finely grated
    • 1/2 teaspoon ground allspice
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground black pepper
    • 1 teaspoon salt
    • 1/4 cup ice-cold water
    • 1/4 cup extra virgin olive oil
  • For Serving:
    • Fresh mint leaves
    • Fresh parsley
    • Sliced onions
    • Fresh vegetables (tomatoes, cucumbers, radishes)
    • Pita bread
    • Olive oil for drizzling

Instructions:

  1. Prepare the Bulgur Wheat:
    • Rinse the bulgur wheat under cold water and drain well. Place it in a bowl and cover with cold water. Let it soak for about 20 minutes, then drain and squeeze out any excess water.
  2. Prepare the Meat:
    • Ensure the meat is very finely minced. You can ask your butcher to do this or use a food processor to achieve a fine texture.
  3. Combine the Ingredients:
    • In a large mixing bowl, combine the minced meat, soaked and drained bulgur wheat, finely grated onion, ground allspice, ground cinnamon, ground black pepper, and salt.
    • Add the ice-cold water and mix thoroughly using your hands until all ingredients are well combined and the mixture is smooth. The cold water helps to keep the mixture fresh and enhances the texture.
  4. Shape the Kibbeh:
    • Transfer the mixture to a serving platter and shape it into a flat, even layer. You can create a decorative pattern on the surface using the back of a spoon or your fingers.
  5. Serve:
    • Drizzle the Kibbeh Nayeh with extra virgin olive oil.
    • Serve immediately with fresh mint leaves, parsley, sliced onions, fresh vegetables, and pita bread. Enjoy it with an extra drizzle of olive oil if desired.
