Prickly Pear Cactus Pie: A Taste of the American Desert

Ingredients:

  • For the crust:
    • 1 1/2 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1/2 cup (1 stick) cold unsalted butter, cubed
    • 3-4 tablespoons ice water
  • For the filling:
    • 2 cups peeled and chopped prickly pear cactus paddles (can be substituted with diced pears)
    • 1/2 cup granulated sugar
    • 1/4 cup packed light brown sugar
    • 1/4 cup cornstarch
    • 1/4 teaspoon ground cinnamon
    • 1/8 teaspoon ground nutmeg
    • 1/4 cup lemon juice
    • 2 tablespoons unsalted butter
    • 1 large egg yolk
    • 1 tablespoon milk

Instructions:

  1. Make the crust: In a large bowl, whisk together flour and salt. Using a pastry cutter or your fingertips, cut in the cold butter until the mixture resembles coarse crumbs. Slowly add ice water, 1 tablespoon at a time, until the dough comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the filling: In a medium saucepan, combine prickly pear cactus paddles (or diced pears), granulated sugar, brown sugar, cornstarch, cinnamon, and nutmeg. Cook over medium heat, stirring occasionally, until the cactus softens and releases its juices, about 10 minutes.
  3. Thicken the filling: In a small bowl, whisk together lemon juice and butter. Slowly whisk this mixture into the cactus mixture in the saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes, or until the filling thickens. Remove from heat and let cool slightly.
  4. Assemble the pie: Preheat oven to 375°F (190°C). Grease a 9-inch pie dish. Roll out the chilled dough on a lightly floured surface to a 12-inch circle. Transfer dough to the pie dish and crimp the edges. Pour the cooled cactus filling into the pie crust.
  5. Egg wash and bake: In a small bowl, whisk together egg yolk and milk. Brush the top crust with the egg wash. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  6. Cool and serve: Let the pie cool completely on a wire rack before slicing and serving. Enjoy a taste of the American desert with this delicious prickly pear cactus pie!

Tips:

  • If you can’t find prickly pear cactus paddles, you can substitute them with diced pears for a similar flavor and texture.
  • For a richer crust, use a mixture of all-purpose flour and whole wheat flour.
  • You can add a pinch of ground ginger or a splash of vanilla extract to the filling for a touch of extra flavor.
  • Serve the pie with a scoop of vanilla ice cream or whipped cream for an extra decadent treat.
