Ingredients

- 500 grams of pork or beef, cubed

Step 1: Preparing the Ingredients
- Preheat the Oven: Preheat your oven to 180°C (350°F).
- Cook the Meat: In a large skillet, heat the oil over medium-high heat. Add the cubed meat and cook until it is browned on all sides. Remove the meat and set it aside.
- Sauté the Vegetables: In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is soft and translucent. Add the bell peppers, tomatoes, mushrooms, and cubed potato. Cook for about 5-7 minutes, until the vegetables start to soften.
Step 2: Assembling the Gyuveche
- Layer the Ingredients: In individual clay pots (or one large oven-safe dish), layer the sautéed vegetables, browned meat, and crumbled cheese. Sprinkle with paprika, dried oregano, thyme, salt, and pepper.
- Add Eggs: Make a small well in the center of each pot and crack an egg into each well.
Step 3: Baking
- Bake: Cover the pots with lids (or cover the large dish with aluminum foil) and bake in the preheated oven for about 30-40 minutes, or until the egg is set and the vegetables are tender.
- Remove Lids: In the last 10 minutes of baking, remove the lids (or foil) to allow the top to brown slightly.
Serving
Gyuveche is best served hot, straight from the oven. Garnish with freshly chopped parsley and serve with a side of crusty bread or a fresh salad.
