Ingredients

For the Meshana Skara, you will need:

  • 2 boneless pork chops
  • 2 chicken breasts
  • 2 Bulgarian kebapche (sausage-shaped minced meat patties)
  • 2 karnache (Bulgarian sausages)
  • 2 lamb chops
  • 2 tablespoons of sunflower oil or olive oil
  • Salt and pepper to taste
  • 1 teaspoon of paprika
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • Lemon wedges for serving
  • Fresh parsley for garnish

Instructions

Step 1: Preparing the Meats

  1. Season the Meats: Rub the pork chops, chicken breasts, and lamb chops with salt, pepper, paprika, dried oregano, and dried thyme. Drizzle with sunflower oil or olive oil and let them marinate for at least 30 minutes.

Step 2: Preheating the Grill

  1. Preheat the Grill: Preheat your grill to medium-high heat. Brush the grill grates with oil to prevent sticking.

Step 3: Grilling

  1. Grill the Meats: Place the pork chops, chicken breasts, kebapche, karnache, and lamb chops on the grill. Cook each type of meat according to the following guidelines, turning occasionally:
    • Pork Chops: Grill for about 4-5 minutes per side, or until cooked through and nicely charred.
    • Chicken Breasts: Grill for about 6-7 minutes per side, or until cooked through and juices run clear.
    • Kebapche: Grill for about 10-12 minutes, turning occasionally, until evenly browned and cooked through.
    • Karnache: Grill for about 8-10 minutes, turning occasionally, until browned and cooked through.
    • Lamb Chops: Grill for about 4-5 minutes per side for medium-rare, or longer for desired doneness.

Step 4: Serving

  1. Arrange the Meats: Arrange the grilled meats on a large serving platter.
  2. Garnish: Garnish with fresh parsley and lemon wedges for squeezing over the meats.

  • Marinade: For extra flavor, marinate the meats overnight in a mixture of olive oil, lemon juice, garlic, and herbs.
