Sarmi, or stuffed cabbage rolls, is a traditional Bulgarian dish that is particularly popular during the winter months and festive occasions. These delicious rolls are made with tender cabbage leaves filled with a savory mixture of rice, minced meat, and spices, all simmered in a flavorful tomato sauce.
Ingredients
For the Sarmi, you will need:
- 1 large head of cabbage (or jar of pickled cabbage leaves)
- 500 grams of ground pork or beef (or a mix of both)
- 1 cup of rice
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 carrot, grated
- 1 teaspoon of paprika
- 1 teaspoon of dried mint
- 1 teaspoon of dried dill
- Salt and pepper to taste
- 2 tablespoons of sunflower oil or olive oil
- 1 can (400 grams) of diced tomatoes
- 2 cups of beef or vegetable broth
- Fresh dill for garnish
Instructions
Step 1: Preparing the Cabbage Leaves
- Prepare the Cabbage: If using a fresh head of cabbage, bring a large pot of water to a boil. Remove the core from the cabbage and blanch the entire head in boiling water for a few minutes until the leaves are soft and pliable. Carefully separate the leaves. If using pickled cabbage leaves, rinse them under cold water to remove excess salt.
- Trim the Leaves: Cut off the thickest part of the central vein from each cabbage leaf to make them easier to roll.
Step 2: Making the Filling
- Cook the Onion and Garlic: In a large skillet, heat the oil over medium heat. Add the chopped onion and minced garlic and sauté until soft and translucent.
- Add the Meat and Rice: Add the ground meat to the skillet and cook until browned. Stir in the rice, grated carrot, paprika, dried mint, dried dill, salt, and pepper. Cook for a few more minutes until the rice starts to become translucent.
- Add Tomatoes: Stir in half of the canned diced tomatoes and cook for an additional 5 minutes.
Step 3: Assembling the Rolls
- Stuff the Leaves: Place a heaping tablespoon of the meat and rice mixture in the center of each cabbage leaf. Fold the sides over the filling and roll up tightly, tucking in the ends to secure the filling.
- Layer the Rolls: In a large pot or Dutch oven, arrange the cabbage rolls seam-side down in a single layer. If necessary, make additional layers on top.
Step 4: Cooking the Sarmi
- Add Sauce and Broth: Pour the remaining diced tomatoes over the cabbage rolls. Add the beef or vegetable broth until the rolls are just covered.
- Simmer: Bring the pot to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the cabbage leaves are tender and the rice is fully cooked.
Serving
Sarmi is best served hot, garnished with freshly chopped dill. It pairs wonderfully with a dollop of sour cream or a side of crusty bread.
Tips and Variations
- Vegetarian Version: For a vegetarian option, omit the meat and add more vegetables like mushrooms, zucchini, or bell peppers to the filling.
- Sauerkraut Leaves: Use sauerkraut leaves for a tangier flavor.
- Freezing: Sarmi can be made in advance and frozen. Simply reheat them in a pot with some additional broth or tomato sauce.
