Bulgarian cuisine is rich in flavors, colors, and history, reflecting the diverse cultural influences that have shaped this Balkan country. One of the most iconic and beloved dishes in Bulgaria is the Shopska Salad, a refreshing and vibrant salad that is perfect for warm weather. This dish not only represents the essence of Bulgarian culinary tradition but also showcases the simplicity and freshness of the ingredients.

Ingredients

To make a traditional Shopska Salad, you will need the following ingredients:

  • 4 medium-sized tomatoes, ripe and juicy
  • 1 large cucumber
  • 2 bell peppers (preferably one red and one green)
  • 1 small red onion
  • 200 grams of sirene (Bulgarian white cheese) or feta cheese as an alternative
  • Fresh parsley (a small bunch)
  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of red wine vinegar
  • Salt to taste
  • Optional: black olives and boiled eggs for garnish

Instructions

Step 1: Preparing the Vegetables

Start by washing all the vegetables thoroughly. Peel the cucumber if the skin is thick or waxed, but if it’s thin-skinned, you can leave it on for extra crunch.

  1. Chop the Tomatoes: Cut the tomatoes into medium-sized chunks. Aim for bite-sized pieces that are easy to eat with a fork.
  2. Slice the Cucumber: Halve the cucumber lengthwise, then slice it into thin half-moons.
  3. Dice the Bell Peppers: Remove the seeds and stems from the bell peppers and cut them into small, bite-sized pieces.
  4. Slice the Onion: Thinly slice the red onion. If you prefer a milder onion flavor, soak the slices in cold water for about 10 minutes, then drain and pat dry.

Step 2: Assembling the Salad

In a large salad bowl, combine the chopped tomatoes, cucumber, bell peppers, and red onion. Gently toss the vegetables together to mix them evenly.

Step 3: Adding the Cheese

Crumble the sirene or feta cheese over the salad. The cheese should be crumbled finely enough to distribute its salty, tangy flavor throughout the dish but not so fine that it turns into powder.

Step 4: Dressing the Salad

In a small bowl, whisk together the olive oil, red wine vinegar, and a pinch of salt. Pour the dressing over the salad and toss gently to coat all the ingredients. Be careful not to overmix, as the tomatoes can become too soft.

Step 5: Garnishing

Finely chop the fresh parsley and sprinkle it over the top of the salad. If desired, garnish with black olives and slices of boiled egg for added texture and flavor.

Serving

Shopska Salad is best served chilled. Allow the salad to rest in the refrigerator for about 30 minutes before serving to let the flavors meld together. This salad pairs wonderfully with grilled meats, fresh bread, or can be enjoyed on its own as a light and refreshing meal.

  • Pepper Roasting: For a smoky twist, you can roast the bell peppers before dicing them. Simply char them on a grill or under a broiler, then peel off the skins and chop.
  • Herb Variations: While parsley is traditional, you can experiment with other fresh herbs like dill or mint for a different flavor profile.
  • Extra Veggies: Feel free to add other fresh vegetables like radishes or scallions to the mix.
