Ingredients

For the Cabbage Rolls:

  • 1 large head of cabbage
  • 500 grams (about 1 lb) ground beef or pork
  • 1 cup uncooked rice
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Sauce:

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (400 grams) crushed tomatoes
  • 2 cups beef or vegetable broth
  • 1 teaspoon paprika
  • Salt and pepper to taste

For Garnish:

  • Fresh parsley, chopped
  • Sour cream (optional)

Instructions

Preparing the Cabbage

  1. Boil the Cabbage: Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head into the boiling water. Cook for about 5-10 minutes, until the outer leaves start to soften and become pliable. Remove the cabbage from the water and let it cool slightly.
  2. Separate the Leaves: Gently separate the cabbage leaves, being careful not to tear them. Set aside the larger, intact leaves for rolling. Trim the thick central vein of each leaf to make rolling easier.

Preparing the Filling

  1. Mix the Filling: In a large mixing bowl, combine the ground meat, uncooked rice, finely chopped onion, minced garlic, egg, paprika, dried oregano, dried thyme, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

Assembling the Sarma

  1. Stuff the Leaves: Place a heaping tablespoon of the filling onto the center of each cabbage leaf. Fold the sides of the leaf over the filling and roll it up tightly into a cylinder.
  2. Layer the Rolls: In a large pot or Dutch oven, layer some of the smaller or torn cabbage leaves on the bottom to prevent sticking. Arrange the stuffed cabbage rolls seam-side down in the pot, stacking them in layers.

Cooking the Sarma

  1. Prepare the Sauce: In a separate pan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until softened. Add the minced garlic and cook for another minute. Stir in the crushed tomatoes, beef or vegetable broth, paprika, salt, and pepper. Bring the sauce to a simmer.
  2. Cook the Sarma: Pour the tomato sauce over the cabbage rolls in the pot, ensuring they are mostly covered with liquid. If necessary, add more broth or water. Bring to a gentle simmer, then cover and cook on low heat for about 1.5 to 2 hours, or until the cabbage is tender and the flavors have melded together.

Serving the Sarma

  1. Plate the Rolls: Carefully remove the cabbage rolls from the pot and arrange them on a serving platter.
  2. Garnish and Serve: Garnish with freshly chopped parsley and serve with a dollop of sour cream if desired. Enjoy the Sarma hot.
