Croatian Recipe: Rožata (Dalmatian Custard Pudding)

Rožata, also known as Rozata or Dubrovnik Custard Pudding, is a traditional Croatian dessert from the Dalmatian region. It is a rich and creamy custard pudding flavored with caramel and a hint of rose liqueur or rose water, which gives it a unique and delicate aroma.

Ingredients

For the Caramel:

  • 1 cup sugar
  • 1/4 cup water

For the Custard:

  • 4 cups whole milk
  • 1 cup sugar
  • 6 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon rose liqueur or 1 teaspoon rose water
  • Zest of 1 lemon

For Garnish:

  • Fresh mint leaves
  • Berries (optional)

Instructions

Preparing the Caramel

  1. Make the Caramel: In a heavy saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar dissolves and turns a deep golden brown. Be careful not to burn it.
  2. Pour the Caramel: Immediately pour the caramel into a round baking dish or individual ramekins, swirling to coat the bottom evenly. Set aside to cool and harden.

Preparing the Custard

  1. Heat the Milk: In a large saucepan, heat the milk over medium heat until it just begins to simmer. Remove from heat.
  2. Mix Eggs and Sugar: In a large mixing bowl, whisk together the eggs and sugar until well combined and slightly frothy.
  3. Combine Ingredients: Gradually pour the hot milk into the egg mixture, whisking continuously to prevent curdling. Stir in the vanilla extract, rose liqueur or rose water, and lemon zest.

Baking the Rožata

  1. Prepare the Baking Dish: Pour the custard mixture over the hardened caramel in the baking dish or ramekins.
  2. Bake in a Water Bath: Place the baking dish or ramekins in a larger baking pan. Pour hot water into the larger pan until it reaches halfway up the sides of the baking dish or ramekins.
  3. Bake: Preheat the oven to 325°F (160°C). Bake the custard for about 45-60 minutes, or until the center is set and a knife inserted into the center comes out clean.

Cooling and Serving

  1. Cool the Custard: Remove the baking dish or ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours or until well chilled.
  2. Unmold the Rožata: To serve, run a knife around the edges of the custard to loosen it. Invert the baking dish or ramekins onto a serving plate to release the custard and caramel.
  3. Garnish and Serve: Garnish with fresh mint leaves and berries if desired. Serve chilled.
