Ingredients

  • 500 grams (about 1 lb) fresh cheese (such as cottage cheese or ricotta)
  • 1 egg
  • 1/2 cup sour cream
  • Salt to taste

For the Topping (if baked):

  • 1/2 cup sour cream
  • 1/2 cup heavy cream

Instructions

Preparing the Dough

  1. Mix the Dough: In a large mixing bowl, combine the flour and salt. Add the vegetable oil and lukewarm water. Mix until a dough forms.
  2. Knead the Dough: Turn the dough out onto a floured surface and knead for about 10 minutes, until it becomes smooth and elastic.
  3. Rest the Dough: Place the dough in a greased bowl, cover with a damp cloth, and let it rest for at least 30 minutes.

Preparing the Filling

  1. Mix the Filling: In a mixing bowl, combine the fresh cheese, egg, sour cream, and salt. Mix well until the ingredients are fully incorporated.

Assembling the Štrukli

  1. Roll Out the Dough: On a floured surface, roll out the dough as thin as possible, forming a large rectangle.

  3. Roll the Dough: Carefully roll the dough into a log, starting from one of the long sides.
  4. Cut the Rolls: Cut the rolled dough into 2-inch pieces.

Cooking the Štrukli

  2. Cook the Štrukli: Carefully drop the pieces of rolled dough into the boiling water. Cook for about 10 minutes, or until they float to the surface.
  3. Serve: Remove the boiled Štrukli with a slotted spoon and transfer to a serving dish. Drizzle with melted butter or top with sour cream.

Baked Štrukli

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Arrange in a Baking Dish: Place the cut pieces of rolled dough in a greased baking dish.
  3. Add the Topping: In a small bowl, mix together the sour cream and heavy cream. Pour this mixture over the Štrukli.
  4. Bake: Bake in the preheated oven for about 30-40 minutes, or until the top is golden brown and bubbly.
