Ingredients

  • 1 lb salted cod (bacalhau)
  • 2 large onions, finely sliced

  • 4 large potatoes, peeled and julienned
  • 6 large eggs
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

Preparing the Salted Cod

  1. Desalt the Cod:
    • Rinse the salted cod under cold water to remove excess salt.
    • Place the cod in a large bowl and cover with cold water. Soak for 24-48 hours, changing the water every 6-8 hours.
    • After desalting, drain and pat the cod dry. Remove any skin and bones, and shred the cod into small pieces.

Preparing the Potatoes

  1. Fry the Potatoes:
    • In a large frying pan, heat enough olive oil to cover the bottom of the pan over medium-high heat.

    • In a bowl, beat the eggs with a pinch of salt and pepper.
    • Pour the beaten eggs over the mixture in the skillet.
