Ingredients

  • 1 lb mixed fish fillets (such as cod, haddock, or sea bass), cut into chunks
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb clams or mussels, cleaned
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 4 large tomatoes, chopped
  • 4 large potatoes, peeled and thinly sliced
  • 1/4 cup olive oil
  • 1/2 cup white wine
  • 4 cups fish stock or water
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1/2 teaspoon saffron threads (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • Lemon wedges for serving

Instructions

Preparing the Ingredients

  1. Prep the Vegetables:
    • Thinly slice the onions, bell peppers, and potatoes.
    • Chop the tomatoes and mince the garlic.
  2. Prepare the Seafood:
    • Cut the fish fillets into chunks and clean the shrimp and clams/mussels.

Cooking the Stew

  1. Sauté the Aromatics:
    • In a large pot, heat the olive oil over medium heat.
    • Add the sliced onions and sauté until they become soft and translucent.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  2. Add the Vegetables:
    • Add the sliced bell peppers, chopped tomatoes, and sliced potatoes to the pot.
    • Stir in the paprika and saffron (if using), and cook for about 5 minutes.
  3. Add the Liquid:
    • Pour in the white wine and fish stock (or water).
    • Add the bay leaf, and season with salt and pepper to taste.
    • Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  4. Add the Seafood:
    • Gently place the fish chunks, shrimp, and clams/mussels into the pot.
    • Cover and let the stew simmer for another 10 minutes, or until the seafood is cooked through and the clams/mussels have opened.

Serving

  1. Garnish and Serve:
    • Remove the bay leaf from the stew.
    • Ladle the Caldeirada into bowls, making sure to include a variety of fish, shrimp, and clams/mussels in each serving.
    • Garnish with chopped fresh parsley and serve with lemon wedges on the side.

Variations and Tips

  • Different Fish: Use any firm white fish you prefer or have available.
  • Spicy Version: Add a pinch of red pepper flakes for a spicy kick.
  • Thicker Broth: If you prefer a thicker stew, mash a few of the potato slices into the broth before adding the seafood.
