Japanese Classic: Onigiri (Rice Balls)

Onigiri, or Japanese rice balls, are a popular and versatile snack in Japan. These handheld treats are made from seasoned rice, often filled with various savory ingredients and wrapped in nori (seaweed). Onigiri can be enjoyed as a quick snack, a light meal, or part of a bento box. Follow this recipe to create delicious Onigiri at home.

Ingredients:

For the Rice:

  • 2 cups Japanese short-grain rice
  • 2 1/2 cups water
  • 1/2 teaspoon salt

For the Filling (choose one or mix and match):

  • 1/2 cup cooked salmon, flaked
  • 1/2 cup umeboshi (pickled plum), pitted and chopped
  • 1/2 cup tuna mixed with mayonnaise
  • 1/2 cup pickled vegetables, chopped

For Wrapping:

  • Nori (seaweed) sheets, cut into strips

Instructions:

Preparing the Rice:

  1. Rinse the Rice:
    • Rinse the rice under cold water until the water runs clear. Drain well.
  2. Cook the Rice:
    • In a rice cooker or a pot, combine the rinsed rice and water. Cook according to the rice cooker’s instructions or bring to a boil, then reduce to a simmer, cover, and cook for about 18 minutes. Let it rest for 10 minutes.
  3. Season the Rice:
    • Transfer the cooked rice to a large bowl. Sprinkle with salt and gently mix with a rice paddle or spatula.

Shaping the Onigiri:

  1. Prepare the Filling:
    • Choose your desired filling and have it ready.
  2. Wet Your Hands:
    • Wet your hands with water to prevent the rice from sticking. Sprinkle a little salt on your palms.
  3. Shape the Rice Balls:
    • Take a handful of rice and flatten it slightly in your palm. Place a small amount of filling in the center, then fold the rice around the filling, pressing gently to shape it into a ball or triangle. Repeat with the remaining rice and filling.

Wrapping the Onigiri:

  1. Wrap with Nori:
    • Wrap a strip of nori around each rice ball, pressing gently to adhere. The nori can cover the entire rice ball or just a portion, depending on your preference.

Serving:

  1. Serve Fresh:
    • Serve the Onigiri immediately, or store them in an airtight container for a few hours. They are best enjoyed at room temperature.
