Takoyaki is a popular Japanese street food made from a batter filled with diced octopus, tempura scraps, pickled ginger, and green onions, cooked in a special takoyaki pan. These delicious octopus balls are crispy on the outside and tender on the inside, typically served with takoyaki sauce, Japanese mayonnaise, bonito flakes, and aonori. Follow this recipe to create authentic Takoyaki at home.

Ingredients:

For the Batter:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups dashi (Japanese soup stock)
  • 1/2 teaspoon baking powder
  • Pinch of salt

For the Filling:

  • 1/2 lb (225g) cooked octopus, diced
  • 1/4 cup tempura scraps (tenkasu)
  • 2 tablespoons pickled ginger, chopped
  • 2 green onions, finely chopped

For Topping:

  • Takoyaki sauce (store-bought or homemade)
  • Japanese mayonnaise
  • Bonito flakes (katsuobushi)
  • Aonori (dried seaweed powder)

Instructions:

Preparing the Batter:

  1. Mix the Batter:
    • In a large mixing bowl, combine the flour, eggs, dashi, baking powder, and salt. Mix until smooth.

Cooking the Takoyaki:

  1. Heat the Takoyaki Pan:
    • Preheat a takoyaki pan over medium heat and lightly oil each well.
  2. Pour the Batter:
    • Pour the batter into each well, filling them about halfway.
  3. Add the Filling:
    • Place a piece of diced octopus, a few tempura scraps, a little pickled ginger, and some chopped green onions into each well. Pour more batter over the top to fill each well completely.
  4. Cook the Takoyaki:
    • Cook for 1-2 minutes until the edges start to set. Use a takoyaki pick or skewer to turn each ball 90 degrees. Continue turning and cooking until the takoyaki are golden brown and crispy on all sides, about 5-7 minutes.

Serving:

  1. Top the Takoyaki:
    • Transfer the cooked takoyaki to a serving plate. Drizzle with takoyaki sauce and Japanese mayonnaise. Sprinkle with bonito flakes and aonori.
  2. Serve Hot:
    • Serve the takoyaki hot, and enjoy!
