Enchiladas Verdes are a beloved Mexican dish featuring corn tortillas filled with shredded chicken, topped with a tangy green tomatillo sauce, and baked until bubbly. This dish is rich in flavor and perfect for a family meal. Follow this recipe to create delicious Enchiladas Verdes at home.

Ingredients:

For the Green Sauce:

  • 1 lb (450g) tomatillos, husked and rinsed
  • 2-3 jalapeños or serrano peppers
  • 1 small onion, quartered
  • 3 cloves garlic
  • 1/2 cup fresh cilantro, chopped
  • 1 cup chicken broth
  • Salt to taste

For the Enchiladas:

  • 2 cups cooked shredded chicken
  • 12 corn tortillas
  • 1 cup shredded Monterey Jack or queso fresco
  • 1/2 cup sour cream or Mexican crema
  • Vegetable oil for frying
  • Fresh cilantro, chopped (for garnish)
  • Sliced radishes (for garnish)

Instructions:

Preparing the Green Sauce:

  1. Cook the Vegetables:
    • In a large pot, combine the tomatillos, jalapeños, onion, and garlic. Add enough water to cover the vegetables and bring to a boil. Cook until the tomatillos and peppers are soft, about 10 minutes. Drain.
  2. Blend the Sauce:
    • In a blender, combine the cooked vegetables, chopped cilantro, and chicken broth. Blend until smooth. Season with salt to taste.
  3. Simmer the Sauce:
    • Pour the blended sauce into a saucepan and bring to a simmer over medium heat. Cook for about 10 minutes, stirring occasionally, until the sauce thickens slightly. Set aside.

Preparing the Enchiladas:

  1. Warm the Tortillas:
    • In a small skillet, heat a little vegetable oil over medium heat. Lightly fry each tortilla for a few seconds on each side until pliable. Drain on paper towels.
  2. Fill the Tortillas:
    • Place a small amount of shredded chicken in the center of each tortilla. Roll up the tortillas and place them seam-side down in a baking dish.
  3. Top with Sauce and Cheese:
    • Pour the green sauce over the enchiladas, ensuring they are fully covered. Sprinkle the shredded cheese over the top.
  4. Bake:
    • Preheat your oven to 350°F (175°C). Bake the enchiladas for about 20 minutes, or until the cheese is melted and bubbly.

Serving:

  1. Garnish:
    • Drizzle the enchiladas with sour cream or Mexican crema. Garnish with chopped cilantro and sliced radishes.
  2. Serve Hot:
    • Serve the Enchiladas Verdes hot, with your favorite side dishes such as rice and beans.
