Ingredients:

For the Tostadas:

  • 8 small corn tortillas
  • Vegetable oil for frying

For the Toppings:

  • 1 cup refried beans
  • 2 cups cooked shredded chicken or beef
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/2 cup crumbled queso fresco or shredded cheddar cheese
  • 1 avocado, sliced
  • 1/2 cup sour cream or Mexican crema
  • Salsa or hot sauce
  • Fresh cilantro, chopped
  • Lime wedges (for serving)

Instructions:

Preparing the Tostadas:

  1. Fry the Tortillas:
    • In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat. Fry each tortilla until golden brown and crispy, about 2-3 minutes per side. Remove from the oil and drain on paper towels. Alternatively, you can bake the tortillas in a preheated oven at 400°F (200°C) for about 5-7 minutes per side until crispy.

Assembling the Tostadas:

  1. Spread the Beans:
    • Spread a layer of refried beans on each crispy tortilla.
  2. Add the Meat:
    • Top the beans with shredded chicken or beef.
  3. Add Fresh Toppings:
    • Add shredded lettuce, diced tomatoes, and diced onions.
  4. Finish with Cheese and Avocado:
    • Sprinkle crumbled queso fresco or shredded cheddar cheese on top. Add slices of avocado.
  5. Drizzle with Cream and Salsa:
    • Drizzle sour cream or Mexican crema over the top. Add a spoonful of salsa or hot sauce.
  6. Garnish:
    • Garnish with chopped fresh cilantro and serve with lime wedges.
