Gazpacho is a refreshing and chilled soup that originates from the Andalusian region of Spain. Ingredients:

  • 6 ripe tomatoes, cored and chopped
  • 1 cucumber, peeled, seeded, and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 green bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 3 cups tomato juice
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley for garnish (optional)
  • Croutons for garnish (optional)

Instructions:

Preparing the Gazpacho:

  1. Combine Vegetables:
    • In a large bowl, combine the chopped tomatoes, cucumber, red bell pepper, green bell pepper, red onion, and minced garlic.
  2. Blend the Mixture:
    • Working in batches, transfer the vegetable mixture to a blender or food processor. Blend until smooth. Alternatively, you can blend the mixture to your preferred texture, leaving it slightly chunky if desired.
  3. Add Liquid Ingredients:
    • Pour the blended mixture back into the large bowl. Stir in the tomato juice, olive oil, and red wine vinegar until well combined.
  4. Season:
    • Season the gazpacho with salt and freshly ground black pepper to taste. Adjust the vinegar and olive oil if needed.
  5. Chill the Soup:
    • Cover the bowl with plastic wrap and refrigerate the gazpacho for at least 2 hours, or until well chilled. This allows the flavors to meld together.

Serving:

  1. Garnish:
    • Ladle the chilled gazpacho into bowls. Garnish with fresh basil or parsley and croutons if desired.
  2. Enjoy:
    • Serve the gazpacho cold, enjoying its refreshing and vibrant flavors. It’s perfect as a starter or a light main course on a hot day.
