Patatas Bravas is a quintessential Spanish tapa that features crispy fried potatoes served with a spicy tomato sauce and aioli. This dish is a favorite in bars and restaurants across Spain and is perfect for sharing with friends and family. Follow this recipe to create authentic Patatas Bravas at home.

Ingredients:

For the Potatoes:

  • 4 large potatoes, peeled and cut into 1-inch cubes
  • 4 cups vegetable oil (for frying)
  • Salt to taste

For the Bravas Sauce:

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon flour
  • 1 cup tomato sauce
  • 1/2 cup chicken or vegetable broth
  • Salt and freshly ground black pepper to taste

For the Aioli:

  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions:

Preparing the Bravas Sauce:

  1. Sauté the Aromatics:
    • In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
  2. Add the Spices and Flour:
    • Stir in the smoked paprika, sweet paprika, and cayenne pepper. Add the flour and cook for 1-2 minutes, stirring constantly, to form a roux.
  3. Add the Tomato Sauce and Broth:
    • Gradually whisk in the tomato sauce and broth. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until the sauce thickens. Season with salt and pepper to taste. Set aside.

Preparing the Aioli:

  1. Mix the Ingredients:
    • In a small bowl, combine the mayonnaise, minced garlic, lemon juice, and a pinch of salt. Stir until well combined. Set aside.

Frying the Potatoes:

  1. Heat the Oil:
    • In a large, deep skillet or Dutch oven, heat the vegetable oil to 350°F (175°C).
  2. Fry the Potatoes:
    • Working in batches, fry the potato cubes for about 5-7 minutes, or until golden brown and crispy. Use a slotted spoon to transfer the fried potatoes to a paper towel-lined plate to drain. Sprinkle with salt while still hot.

Serving:

  1. Assemble the Dish:
    • Arrange the crispy fried potatoes on a serving platter. Drizzle the bravas sauce over the top, followed by the aioli. Alternatively, serve the sauces on the side for dipping.
  2. Garnish:
    • Garnish with a sprinkle of fresh parsley if desired.
