Tortilla Española, also known as Spanish omelette, is a beloved classic in Spanish cuisine. This simple yet flavorful dish is made with potatoes, onions, and eggs, cooked to perfection. It’s versatile enough to be enjoyed for breakfast, lunch, or dinner and can be served warm or at room temperature.

Ingredients:

  • 4 large potatoes, peeled and thinly sliced
  • 1 large onion, thinly sliced
  • 6 large eggs
  • 1 cup olive oil (for frying)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

Preparing the Tortilla:

  1. Heat the Oil:
    • In a large, deep skillet, heat the olive oil over medium heat.
  2. Cook the Potatoes and Onions:
    • Add the sliced potatoes to the skillet and cook for about 10 minutes, stirring occasionally. Add the sliced onions and continue to cook until the potatoes are tender and the onions are soft, about another 10 minutes. Be careful not to let them brown too much. Use a slotted spoon to transfer the potatoes and onions to a bowl, draining off any excess oil.
  3. Beat the Eggs:
    • In a large mixing bowl, beat the eggs with a pinch of salt and freshly ground black pepper. Gently stir in the cooked potatoes and onions, mixing until well combined.
  4. Cook the Tortilla:
    • Remove all but 2 tablespoons of oil from the skillet and heat over medium heat. Pour the egg, potato, and onion mixture into the skillet. Cook for about 6-8 minutes, or until the edges start to set and the bottom is golden brown.
  5. Flip the Tortilla:
    • To flip the tortilla, place a large plate over the skillet. Carefully invert the skillet so the tortilla falls onto the plate. Slide the tortilla back into the skillet, uncooked side down. Cook for an additional 5-6 minutes, until the tortilla is fully set and cooked through.
  6. Cool and Serve:
    • Transfer the tortilla to a serving plate and let it cool slightly. Garnish with fresh parsley if desired.

    • Slice the tortilla into wedges and serve warm or at room temperature. It’s perfect on its own or paired with a simple salad.
