Karelian Stew, or Karjalanpaisti, is a classic Finnish dish known for its simplicity and rich, hearty flavors. This stew is a celebration of meat, traditionally made with a combination of beef, pork, and lamb, and slow-cooked to tender perfection. Here’s how you can make this authentic Finnish dish at home.

Ingredients:

  • 1 pound beef, cubed
  • 1 pound pork, cubed
  • 1 pound lamb, cubed
  • 2 teaspoons sea salt
  • Water (enough to almost cover the meat)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 570°F (300°C).
  2. Prepare the Meat:
    • In a large ovenproof pot or Dutch oven, combine the beef, pork, and lamb. Season with sea salt.
  3. Bake at High Temperature:
    • Add enough water to almost cover the meat. Place the pot in the preheated oven and bake until the top meat is browned.
  4. Slow Cook:
    • Reduce the oven temperature to 350°F (150°C). Continue to cook the stew for about 3 hours, or until the meat is extremely tender.
  5. Serve:
    • Serve the Karelian Stew hot, garnished with fresh herbs if desired. This stew pairs well with mashed potatoes or rye bread.
