Ingredients:

  • For the Cake:

    • 250 g (2 cups) all-purpose flour, sifted
    • 1 teaspoon vanilla extract
  • For the Filling:
    • 500 g (18 oz) guava paste
    • 1/2 cup water
  • For Dusting:
    • Powdered sugar

Instructions:

  1. Prepare the Guava Filling:
    • In a saucepan, combine the guava paste and water. Cook over low heat, stirring frequently, until the guava paste melts and becomes a smooth, spreadable consistency. Set aside to cool.
  2. Prepare the Cake Batter:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and grease it well.
    • In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • Gradually add the sifted flour and vanilla extract, mixing until just combined.
  3. Bake the Cake Layers:
    • Spread a thin layer of the batter onto the prepared baking sheet, ensuring it’s evenly distributed.
    • Bake in the preheated oven for about 5-7 minutes, or until the edges start to turn golden and the cake is set but not browned.
    • Remove from the oven and let it cool slightly.
  4. Assemble the Bolo de Rolo:
    • Carefully invert the baked cake layer onto a clean kitchen towel or another piece of parchment paper. Peel off the original parchment paper.
    • Spread a thin layer of the guava filling over the cake.
    • Using the towel or parchment paper to help, roll the cake tightly from one short end to the other, creating a spiral.
    • Repeat the process with the remaining batter and filling, each time rolling the new layer around the existing roll to create a larger spiral.
  5. Finish and Serve:
    • Once all the layers are assembled and rolled, wrap the cake tightly in plastic wrap and refrigerate for at least 2 hours to set.
    • Before serving, dust the Bolo de Rolo with powdered sugar. Slice into thin rounds to showcase the beautiful spiral pattern.
