Korean Classic: Kimchi Jjigae (Kimchi Stew)

Kimchi Jjigae is a popular Korean stew made with kimchi, tofu, pork, and vegetables. This hearty and flavorful dish is perfect for a warming meal. Follow this recipe to create authentic Kimchi Jjigae at home.

Ingredients:

  • 2 cups well-fermented kimchi, chopped
  • 1/2 lb (225g) pork belly or pork shoulder, sliced into bite-sized pieces
  • 1/2 block tofu, cut into cubes
  • 1 medium onion, sliced
  • 2 green onions, chopped
  • 1 zucchini, sliced
  • 1 tablespoon vegetable oil
  • 4 cups water or anchovy broth
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon gochugaru (Korean chili flakes)
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 2 cloves garlic, minced

Instructions:

Preparing the Stew:

  1. Cook the Pork:
    • In a large pot, heat the vegetable oil over medium heat. Add the sliced pork belly or pork shoulder and cook until browned.
  2. Add Aromatics and Kimchi:
    • Add the minced garlic and sliced onion to the pot and cook until the onion is translucent. Add the chopped kimchi and cook for about 5 minutes until the kimchi is softened.
  3. Add Broth and Seasonings:
    • Pour in the water or anchovy broth. Add the gochujang, gochugaru, soy sauce, and sugar. Stir to combine.
  4. Simmer the Stew:
    • Bring the stew to a boil, then reduce the heat and let it simmer for about 20 minutes to allow the flavors to meld.
  5. Add Tofu and Vegetables:
    • Add the cubed tofu and sliced zucchini to the pot. Continue to simmer for another 10 minutes until the zucchini is tender.
  6. Add Green Onions:
    • Stir in the chopped green onions and cook for an additional 2 minutes.

Serving:

  1. Serve Hot:
    • Ladle the Kimchi Jjigae into bowls and serve hot with steamed rice.
