Korean Classic: Tteokbokki (Spicy Rice Cakes)

Tteokbokki is a popular Korean street food made with chewy rice cakes cooked in a spicy and slightly sweet gochujang sauce. This comforting and flavorful dish is perfect for a quick snack or a hearty meal. Follow this recipe to create authentic Tteokbokki at home.

Ingredients:

  • 1 lb (450g) Korean rice cakes (tteok)
  • 4 cups water
  • 1 cup fish cake, sliced
  • 1 small onion, sliced
  • 2 green onions, chopped
  • 1 hard-boiled egg, halved (optional)
  • 1 tablespoon sesame seeds (for garnish)

For the Sauce:

  • 3 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon gochugaru (Korean chili flakes)
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 1 tablespoon corn syrup or honey
  • 1 teaspoon sesame oil

Instructions:

Preparing the Rice Cakes:

  1. Soak the Rice Cakes:
    • If using refrigerated or frozen rice cakes, soak them in warm water for about 10 minutes to soften. Drain and set aside.

Preparing the Sauce:

  1. Mix the Sauce:
    • In a small bowl, combine the gochujang, gochugaru, soy sauce, sugar, minced garlic, corn syrup or honey, and sesame oil. Mix until smooth.

Cooking the Tteokbokki:

  1. Boil the Ingredients:
    • In a large pot, bring the water to a boil. Add the sliced onion and green onions. Boil for about 5 minutes until the onions are slightly softened.
  2. Add the Rice Cakes and Sauce:
    • Add the soaked rice cakes to the pot. Pour in the sauce and stir to coat the rice cakes evenly. Bring to a simmer and cook for about 10-15 minutes, stirring occasionally, until the sauce thickens and the rice cakes are soft and chewy.
  3. Add the Fish Cake:
    • Add the sliced fish cake to the pot and cook for an additional 5 minutes.

Serving:

  1. Garnish and Serve:
    • Transfer the Tteokbokki to a serving dish. Garnish with sesame seeds and add halved hard-boiled eggs if desired. Serve hot.
