Instructions:

  1. Prepare the Chickpeas:
    • If using canned chickpeas, drain and rinse them well. For a smoother hummus, you can remove the skins by gently rubbing the chickpeas with a clean kitchen towel.
  2. Blend the Ingredients:
    • In a food processor, combine the chickpeas, tahini, fresh lemon juice, minced garlic, olive oil, ground cumin, and salt.
    • Process until the mixture is smooth and creamy.
  3. Adjust Consistency:
    • With the food processor running, gradually add cold water, one tablespoon at a time, until you reach your desired consistency. The hummus should be smooth and slightly fluffy.
  4. Serve:
    • Transfer the hummus to a serving bowl. Use the back of a spoon to create a shallow well in the center.
    • Drizzle with additional olive oil and sprinkle with paprika and chopped fresh parsley.
