Hummus is a classic Lebanese dip made from chickpeas, tahini, lemon juice, and garlic. This creamy and nutritious spread is a staple in Lebanese cuisine and is often served as part of a mezze platter with fresh vegetables, pita bread, or crackers. Here’s a traditional recipe to help you make Lebanese Hummus at home.

Ingredients:

  • 2 cups canned chickpeas, drained and rinsed
  • 1/2 cup tahini (sesame paste)
  • 1/4 cup fresh lemon juice (about 1-2 lemons)
  • 2-3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 2-3 tablespoons cold water
  • Paprika, for garnish
  • Fresh parsley, chopped, for garnish
  • Additional olive oil, for drizzling

Instructions:

  1. Prepare the Chickpeas:
    • If using canned chickpeas, drain and rinse them well. For a smoother hummus, you can remove the skins by gently rubbing the chickpeas with a clean kitchen towel.
  2. Blend the Ingredients:
    • In a food processor, combine the chickpeas, tahini, fresh lemon juice, minced garlic, olive oil, ground cumin, and salt.
    • Process until the mixture is smooth and creamy.
  3. Adjust Consistency:
    • With the food processor running, gradually add cold water, one tablespoon at a time, until you reach your desired consistency. The hummus should be smooth and slightly fluffy.
  4. Serve:
    • Transfer the hummus to a serving bowl. Use the back of a spoon to create a shallow well in the center.
    • Drizzle with additional olive oil and sprinkle with paprika and chopped fresh parsley.
  5. Enjoy:
    • Serve the hummus with warm pita bread, fresh vegetables, or crackers. It can also be used as a spread for sandwiches or wraps.
