Kafta, also known as kofta, is a traditional Lebanese dish made from ground meat, typically beef or lamb, mixed with onions, parsley, and a blend of spices. These flavorful meat patties or skewers are often grilled and served with pita bread, fresh vegetables, and a side of tahini sauce or yogurt. Here’s a traditional recipe to help you make Lebanese Kafta at home.

Ingredients:

  • 500 g (1 lb) ground beef or lamb
  • 1 large onion, finely chopped
  • 1 bunch of fresh parsley, finely chopped
  • 2-3 cloves garlic, minced
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil

For Serving:

  • Pita bread
  • Fresh vegetables (tomatoes, cucumbers, onions)
  • Tahini sauce or yogurt
  • Lemon wedges

Instructions:

  1. Prepare the Meat Mixture:
    • In a large mixing bowl, combine the ground beef or lamb, finely chopped onion, parsley, minced garlic, ground allspice, ground cinnamon, ground cumin, black pepper, and salt.
    • Mix thoroughly until all the ingredients are well incorporated.
  2. Shape the Kafta:
    • Divide the meat mixture into equal portions and shape them into patties or long sausage-like shapes. If using skewers, shape the meat mixture around the skewers.
  3. Cook the Kafta:
    • Preheat your grill or grill pan over medium-high heat. Brush the grill with olive oil to prevent sticking.
    • Grill the kafta for about 4-5 minutes on each side, or until fully cooked and nicely charred. If you don’t have a grill, you can also cook the kafta in a hot skillet with olive oil.
  4. Serve:
    • Serve the kafta hot with pita bread, fresh vegetables, and a side of tahini sauce or yogurt. Add lemon wedges for an extra burst of flavor.

Tips for Perfect Kafta:

  • Finely Chopped Ingredients: Ensure the onions and parsley are finely chopped for a smoother texture.
  • Consistent Shaping: Shape the kafta evenly to ensure even cooking.
  • Spice Blend: Adjust the spices to your taste, adding more or less according to your preference.

Cultural Significance:

Kafta is a beloved dish in Lebanon and throughout the Middle East, often enjoyed during family gatherings and festive occasions. Its flavorful blend of spices and fresh herbs reflects the richness of Lebanese culinary traditions.

Making Lebanese Kafta at home allows you to enjoy a flavorful and traditional dish that’s perfect for any occasion. These grilled meat patties or skewers, with their aromatic spices and fresh herbs, are sure to become a favorite in your household. Whether you’re preparing them for a special celebration or a casual meal, this recipe will bring a taste of Lebanon to your kitchen.
