Ingredients

For the Mojo Marinade:

  • 1 cup sour orange juice (or a mix of 3/4 cup orange juice and 1/4 cup lime juice)
  • 1/4 cup olive oil
  • 8 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

  • 4-5 lb pork shoulder or pork butt
  • 1 large onion, thinly sliced
  • 2 bay leaves

Preparing the Mojo Marinade

  1. Make the Marinade:
    • In a bowl, combine the sour orange juice, olive oil, minced garlic, ground cumin, dried oregano, salt, and ground black pepper.

Marinating the Pork
