Traditional Indian Recipe: Bhindi Masala (Okra Stir-Fry)

Bhindi Masala is a popular North Indian dish made with okra (bhindi) cooked in a blend of spices and onions. It’s a flavorful and healthy vegetarian dish that pairs well with roti, naan, or rice. Here’s a detailed guide to making authentic Bhindi Masala at home.

Ingredients

  • 500g fresh okra (bhindi)
  • 3 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 large onions, finely sliced
  • 2 green chilies, chopped (optional)
  • 1 tablespoon ginger-garlic paste
  • 2 large tomatoes, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

Step 1: Prepare the Okra

  1. Wash the okra thoroughly and pat dry with a kitchen towel. Make sure they are completely dry to prevent them from becoming slimy.
  2. Cut off the tops and tails, then slice the okra into 1-inch pieces.

Step 2: Cook the Okra

  1. Heat 2 tablespoons of oil in a large pan over medium heat.
  2. Add the sliced okra and sauté until they are lightly browned and tender. Remove from the pan and set aside.

Step 3: Prepare the Masala

  1. In the same pan, add the remaining 1 tablespoon of oil.
  2. Add the cumin seeds and let them sizzle for a few seconds.
  3. Add the sliced onions and sauté until they turn golden brown.
  4. Stir in the chopped green chilies (if using) and ginger-garlic paste. Cook for another 2-3 minutes until fragrant.
  5. Add the chopped tomatoes and cook until they soften and the oil begins to separate from the masala.
  6. Add the ground cumin, ground coriander, turmeric powder, red chili powder, and salt. Mix well and cook for another 2 minutes.

Step 4: Combine Okra and Masala

  1. Add the sautéed okra back into the pan and mix well with the masala.
  2. Cook for an additional 5-7 minutes, stirring occasionally, until the okra is fully cooked and coated with the spices.
  3. Sprinkle garam masala over the cooked okra and mix well.

Step 5: Serve

  1. Garnish with freshly chopped coriander leaves.
  2. Serve hot with roti, naan, or steamed basmati rice.

Tips for Perfect Bhindi Masala

  • Dry Okra: Ensure the okra is completely dry before cutting and cooking to prevent sliminess.
  • Spice Level: Adjust the green chilies and red chili powder to suit your heat preference.
  • Cooking: Cook the okra on medium heat to achieve a tender yet slightly crispy texture.
